Kheer Recipe
Kheer is a popular dish of the Indian subcontinent made from rice, milk and
sugar. The word "kheer" comes from the Sanskrit word
"skier" meaning milk. Milk is therefore the main ingredient in khir
dishes, which can be variously prepared with noodles, sago (tapioca pearls),
lentils or vegetables like spinach and carrots
What is Rice Kheer?
Rice khir is a north Indian rice pudding made with basmati rice, sugar,
milk and cardamom. Sometimes flavored with clove, saffron, nutmeg, kewra, or
rose water. This rice khir is made all over India and popular varieties include
South Indian rice payasam and Bengali rice payesh. While the South Indian
version uses light rice, ghee and jaggery, Bangla Payesh is made with
Gobindobhoga rice and palm molasses.

Which rice is best for kheer?
Basmati rice is widely used in North Indian cuisine, so you will find many
people cooking basmati rice kheer as it gives a sweet and tasty aroma but many
parts of India use locally grown varieties of rice. If you don’t have basmati
rice, consider using regular rice. But don’t forget to use starch, otherwise
your milk will not be firm even after cooking for a long time.
What is the best milkshake?
Make authentic sweet creamy kheer with condensed milk (milk powder). If you
are vegan, you can use coconut milk or almond milk.

Kheer and payasam have a rice:milk ratio which most people always follow.
1/4 cup of rice per 4 cups (1 liter) of whole milk.
