Seekh Kebabs Ingredients:

For marinating:

1. 500 grams of minced meat (mutton or chicken)

2. 1 cup thick yogurt

3. 1 tablespoon of ginger-garlic paste

4. 1 teaspoon of turmeric powder

5. 1 teaspoon of red chili powder

6. 1 tsp garam masala

7. Salt to taste

8. 2 tablespoons of vegetable oil

For the kebab:

1. skewers (wooden or metal)

2. Finely chopped fresh coriander leaves

3. Finely chopped mint leaves

4. 1 large onion, finely grated

5. 1 tablespoon of besan (gram flour)

6. 1 egg (optional, for binding)

How to make Seekh Kebabs:

1. Prepare the marinade:

   In a bowl, mix the minced meat with yogurt, ginger-garlic paste, turmeric, red chili, garam masala, salt and vegetable oil.

   Make sure the meat is well coated and marinate for at least 2 hours, or preferably overnight for a richer flavor.

2. Prepare the kebab mixture:

   Add finely chopped coriander leaves, mint leaves, grated onion, besan and egg (if using) to the marinated meat.

   Mix the ingredients thoroughly to form a cohesive mixture.

3. Shape the kebab:

   Preheat grill or oven to medium-high heat.

   Take a handful of the kebab mixture and shape it onto skewers to create long cylindrical shapes.

4. Grilling or baking in the oven:

   Place the skewers on the grill or in the oven and cook, turning occasionally, for about 15-20 minutes, until the kebabs are golden brown and cooked through.

5. Serve hot:

   Once cooked, remove the Seekh Kebab from the skewers and serve hot with mint chutney, naan or rice.

Recipe Notes:

If you are using wooden skewers, soak them in water for at least 30 minutes before threading the kebabs to prevent them from burning.
