Ingredients:
- 1 cup whole black urad dal (sabut urad dal)
- 1/4 cup kidney beans (rajma)
- 1 large onion, finely chopped
- 2 tomatoes, puree
- 34 cloves of garlic, minced
- 1 inch ginger, grated
- 2 green chilies, finely chopped
- 1/2 cup cream
- 1/4 cup butter
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder
- 1/2 teaspoon of turmeric powder
- 1 teaspoon garam masala
- Salt to taste
Fresh coriander leaves for garnish
Instruction:
1. Soaking the lens:
Wash the whole black urad dal and beans thoroughly.
Soak them together in enough water overnight or for at least 8 hours. This will soften the lentils and help them cook.
2. Making Maa ki Dal:
After soaking, drain the water and pressure cook the urad dal and beans with enough water until they are soft and cooked.
In a separate pan, heat the butter and add the cumin seeds. Once it splutters, add the finely chopped onion and saute until golden.
Add chopped garlic, grated ginger and chopped green chillies. Saute until the raw aroma disappears.
Stir in tomato paste, red chili powder, turmeric powder and salt. Cook until the oil starts to separate from the masala.
Transfer the cooked urad dal and beans to this masala mixture. Mix well and let it boil over low heat.
Add the cream and garam masala, stirring gently to combine. Let it cook for another 1520 minutes until the flavors combine.
3. Cooking Maa ki Dal:
If necessary, adjust the consistency by adding water. Cook until desired thickness is reached.
Garnish with fresh coriander leaves and your Maa ki Dal is ready to serve.
